A feast for the palate

NOBLE Park hosted a Bosnian feast last Wednesday.
The Bosnian Roast was held at Pita Lounge as part of The Roast Collection, from the organisers of the Melbourne Food and Wine Festival.
About 30 diners battled the cold with a warm traditional Bosnian winter roast and the sounds of Bosnian music.
The meal included home stretched bureks with savoury fillings, a veal roast and a selection of sweet pastries for dessert.
The veal roast was cooked in a traditional Bosnian SAC, a slow cooking technique that used to be common in Balkans households.
Pita Lounge chef and owner Sam said although the SAC was less common, it was going through a renaissance in Bosnia.
Sam used to be a helicopter pilot in the air force in Bosnia before turning his hand to cooking.
He opened Pita Lounge six months ago and is proud to have what is believed to be the only SAC in Victoria.
The Roast Collection will hold another Bosnian Roast at Pita Lounge on Saturday 25 June at 7pm.
